Description

Amazake is a traditional Japanese drink whose name literally means "sweet sake". Despite its name, it is non-alcoholic. It is made by fermenting rice with kōji, the Japanese ferment : the enzymes naturally present in the kōji convert the rice starch into sugars, which gives it its natural sweetness.

This amazake is made from Noto Hikari rice, grown in the Okunoto region, north of the Noto Peninsula. The rice is turned into kōji by a miso-making house in Noto before being prepared into amazake.

It offers a natural and delicate sweetness, with a characteristic taste of fermented rice. With no alcohol, sweeteners or preservatives, it can be enjoyed on its own or used in many drinks and preparations.
