Description

Suji Aonori seaweed is the most aromatic and highest quality nori variety. Renowned for its intense and fresh fragrance, it is often nicknamed "the queen of green seaweeds." For a long time cultivated in the estuaries of the Shimanto River in Kochi Prefecture, Japan, it has almost disappeared from the markets: rising water temperatures caused harvests to drop to zero kilograms in 2020.

It is in this context that Sea Vegetable developed a unique land-based cultivation method. Suji aonori seaweed is grown in shallow pools, fed by filtered, mineral-rich underground seawater. The shallow depth of the pools allows sunlight to evenly reach all of the seaweed, which photosynthesizes and absorbs nutrients optimally. It is this homogeneous exposure to light and minerals that gives it its intense color and its characteristic fragrance, up to 3.82 times higher than that of aosa.

Harvested fresh and then quickly dried, it retains an exceptional aroma, free from impurities or bitterness.

Flavor

Suji aonori powder develops an intense yet delicate fragrance, with fresh, vegetal, and subtly iodized notes. Its aromatic richness comes notably from dimethyl sulfide, a compound also present in certain gourmet ingredients like high-end teas or truffles, and responsible for this elegant and enveloping sensation. On the palate, the taste is clean, long-lasting, and balanced, with a strong presence of natural umami that enhances dishes.

Usage Used as a finishing spice, suji aonori powder instantly adds depth and elegance to dishes. It can be sprinkled over rice bowls, noodles, vegetables, or eggs, as well as fish and seafood. To fully reveal its aromatic notes, it pairs particularly well with oil-based or fried dishes, as well as butter or cream preparations, such as pasta, mashed potatoes, or risotto, added at the end of cooking to preserve its full fragrance.
