Okonomiyaki

Ingredients for 4 people


  • 60 g of wheat flour
  • 40g Mochiko glutinous rice flour
  • 1 tablespoon of dashi
  • 1 egg
  • 1/4 sweet cabbage (roughly chopped)
  • 2 stalks of chives (green onion)
  • 1 tablespoon of sesame oil "kuki"
  • 1 tablespoon of red pickled ginger (beni shoga)
  • 4-5 shrimps
  • 4 thin slices of pork

For decoration


  • Katsuobushi bonito flakes
  • Tonkatsu sauce
  • Mayonnaise (eg Kewpie)
  • Suji Aonori Dried Seaweed Filaments

Preparation


1.
Roughly chop the cabbage into pieces.

2.Cut the spring onions into slices.

3.Slice the pork and shrimp.

4.In a bowl, combine the wheat flour, glutinous rice flour, eggs, dashi stock, and water. Mix well until you get a smooth paste.

5.Add the cabbage, spring onions, pickled ginger, and shrimp. Mix everything together gently.

6.Heat a pan and add the sesame oil.

7.Pour the mixture into the pan.

8.Arrange the thin slices of pork on top.

9.Cook on one side until golden brown, then carefully flip. When both sides are golden brown, the okonomiyaki is ready!

10.On a plate, place your okonomiyaki then pour over the tonkatsu sauce, the mayonnaise and then the dried seaweed filaments.

11.Sprinkle with bonito flakes to enhance your dish!


It's entirely possible to create several varieties of okonomiyaki by adding kimchi, seafood, seasonal vegetables, other cuts of meat, etc. Let your creativity run wild depending on your current cravings!
