Roasted artichokes with shio ponzu, black garlic sauce

Artichauts rôtis au shio ponzu, sauce à l'ail noir

Ingredients

  • 5-6 purple artichokes from Provence
  • 2 tbsp olive oil
  • 1 chopped shallot
  • 4 tbsp Shio ponzu
  • 2 tbsp cooking sake
  • 20g butter
  • A little pepper
  • Some caper berries (optional)



Ingredients for the sauce

  • 150g Greek yogurt
  • 2 cloves black garlic
  • ½ bunch chopped dill
  • Salt
  • Pepper

Preparation


1.
Preheat your oven to 180°C.

2. Heat the olive oil in a small saucepan. Add the shallot and sauté for a few minutes.

 Deglaze with shio ponzu and sake. Remove from heat, stir in the butter, and season with pepper.

 Remove the bottom 3 rows of leaves from the artichokes, peel the stems, cut them in half, and remove the choke.

Place the artichokes cut-side up on a baking sheet. Drizzle the vinaigrette over them.

 Bake for about 40 minutes in the middle of the preheated oven at 180°C.

Mash the black garlic cloves, then mix with the yogurt and chopped dill. Season with salt and pepper. Serve the sauce with the warm artichokes.
