1.Cut off the top of the fruit, empty the inside and then squeeze the pulp to extract the juice.
2.Mix the agar-agar and sugar.
3.Put the water in a saucepan, then gradually add the agar-agar/sugar mixture while stirring (if you add it all at once, the agar-agar easily forms lumps).
4.Once everything is added, heat over medium heat. When it boils, maintain a rolling boil for another 30 seconds. When the liquid becomes clear, remove from heat.
5.Immediately add the yuzu juice. Mix quickly, pour the jelly into the yuzu, then refrigerate to set. Serve chilled.
