Spring rolls with ponzu jelly
Ingredients
8 rice paper wrappers
4 large lettuce leaves
8 asparagus spears
1 carrot
1 baby cucumber
A handful of peas
A few mint leaves
A few radishes
Ingredients for the ponzu jelly
2g agar-agar
120ml water
120ml ponzu sauce
Preparation
1. Prepare the ponzu jelly: In a small saucepan, mix the water and agar-agar. Heat over low heat, stirring until completely dissolved. Bring to a simmer for about 30 seconds, then gradually add the ponzu sauce, stirring.
2. Pour into a dish and refrigerate until the jelly sets.
3. Slice the vegetables thinly.
4. Dip a rice paper wrapper in warm water to soften it.
5. Place some lettuce and vegetables in the center.
6. Fold in the sides then roll firmly. Repeat the process.
7. Cut the rolls into 4, then add the ponzu jelly on top.
Note:
You can add ingredients of your choice, such as shrimp, chicken or other vegetables according to your taste!
