Smashed Cucumber Salad

Salade de concombres smashés

Ingredients


  • 1 cucumber
  • About ten cherry tomatoes
  • 2 teaspoons of spicy sumo miso
  • 2 teaspoons of gluten-free tamari soy sauce
  • 2 tablespoons of pure rice vinegar
  • 2 teaspoons of sesame oil
  • White sesame seeds

Preparation


1. 
Wash the cucumbers and tomatoes.

2. Crush the whole cucumbers with a rolling pin or the flat side of a large knife. The goal is not to completely destroy the cucumber but to soften it.

3. Cut the cucumbers in half lengthwise and deseed them. Then cut them into slanted pieces.

4. In a bowl, sprinkle the cucumbers with salt, mix well, and let sit for about ten minutes. Then drain the water released by the cucumbers.

5. Cut the cherry tomatoes in half and add them to the cucumbers.

6.  In a bowl, mix the spicy miso, rice vinegar, soy sauce, and sesame oil. Pour the sauce over the cucumbers.

7. Sprinkle with toasted sesame seeds and enjoy!
