Sanuki Udon

Sanuki Udon

Ingredients

  • 100g of Udon
  • 2 tbsp of Saucedashi soy(see recipe below)
  • Chives or spring onions
  • Grated white radish (daikon oroshi)
  • Grated ginger
  • Sesame seeds

Dashi soy sauce

  • 100 ml of mirin
  • 100 ml of soy sauce
  • 1 sachet of dashi

Preparation

1.Cook the udon noodles in a large pot of boiling water for13 minutes.

2Drain them and then place them immediately in a bowl.
(For cold udon noodles, simply rinse them in cold water after cooking.

3.Add the toppings of your choice: chives, grated white radish, grated ginger, sesame seeds, etc.

4Pour the soy sauce and dashi over the noodles.

5.Mix well and enjoy.


Preparation for dashi soy sauce


1.Pour the mirin into a small saucepan and heat it for 1 to 2 minutes to evaporate the alcohol.

2.Remove from heat and add the soy sauce.

3.Add the dashi sachet to the still-warm mixture.

4.Leave to infuse overnight (approximately 12 hours) in the refrigerator for a deeper flavor.

5.Remove the sachet. This sauce can be kept in the refrigerator for 1 week.
