Matcha Financiers

Financiers au matcha

Ingredients


For 18 financiers

• 4 egg whites
• 100g almond flour
• 70g all-purpose flour
• 100g powdered sugar
• 120g butter
• 12g matcha
• 18 salted cherry blossoms

Preparation


1.
Sift the almond flour, wheat flour, and matcha powder.

2. Soak the cherry blossoms in water to remove the salt, then dry them thoroughly.

3. Put the egg whites and sugar in a bowl, then whisk. Do not whip the egg whites; just dissolve the sugar.

4. Add the sifted powders to the bowl and whisk until a homogeneous batter is obtained.

5. Prepare the brown butter: place the butter in a saucepan over low heat and stir with a whisk.

6. When the butter is melted and turns light brown then dark brown, remove from heat and place the saucepan in an ice bath to stop the cooking.

7. Add the brown butter gradually to the batter, whisking constantly. Once well incorporated, put the batter into a piping bag.

8. Butter or oil the molds, then fill them 8/10 full with the batter. Place the cherry blossoms on top.

9. Bake at 200 °C for 13 to 15 minutes.
