Description
This rice syrup, called Komeame, is a natural sweetener made with local organic rice and barley, without added sugar or preservatives. It is produced in Kanazawa by saccharifying rice starch with barley malt enzymes. This rice syrup contains maltose, which is sweeter than sucrose. This food replaced sugar when it was very rare in Japan. Even today, it is a popular ingredient for making tsukudani, stews, and certain Japanese sweets.

Kanazawa Daichi

Kanazawa Daichi is an organic farm, located in the suburbs of Kanazawa and Oku-Noto, in Ishikawa Prefecture. It practices environmentally friendly agriculture. It mainly grows rice, barley, wheat, buckwheat, vegetables, and fruits organically, using abandoned farmland. The processed products it sells are all made with food grown locally on the farm, which promotes both the close relationships with producers and their work.
