Dashi
Dashi is the essential basic broth of Japanese gastronomy, renowned for its ability to reveal the richness of flavors thanks to its unique umami. It is traditionally prepared from kombu seaweed and of dried bonito flakes (katsuobushi), but also exists in a vegetarian version with vegetables or mushrooms.
