Dashi

Dashi is the essential basic broth of Japanese gastronomy, renowned for its ability to reveal the richness of flavors thanks to its unique umami. It is traditionally prepared from kombu seaweed and of dried bonito flakes (katsuobushi), but also exists in a vegetarian version with vegetables or mushrooms. It is available in powder or liquid form for more practical use. Essential for the preparation of miso soup, dashi is also used to enhance noodles, vegetables, fish and meat, bringing depth, balance and authenticity to each dish. Its apparent simplicity hides a thousand-year-old know-how, the true heart of Japanese cuisine.
