Rausu kombu is a rare type of kombu, due to its higher levels of glutamic acid (the umami component). Its leaves are wide, fairly long, rounded, and range in color from black-brown to dark red. Usage It is considered a natural umami seasoning, ideal for preparing dashi broth, for Japanese fondues, in soups or eaten fresh as sashimi… To rehydrate it, leave it in cold water for 30 minutes. Heat over low heat and remove just before boiling. You can then add it to your preparations (salads, fish, etc.) and use the water as dashi broth.

The "Rausu Fisheries Cooperative Association" is a Rausu village fishermen's cooperative association, responsible for promoting and distributing seafood products. Rausu is located on Hokkaido Island in the far north of Japan. This village is particularly known for the quality of its kombu seaweed, called Rausu Kombu. This association dates back to 1949, has 461 members and distributes nearly 55,000 tons of products per year. It provides us with high-quality Rausu Kombu for the preparation of dashi, the Japanese broth.
