Description

Nukadoko is a Japanese mixture containing rice bran, salt, kombu seaweed, and red chili pepper. It is used to ferment Japanese vegetables, called nukazuke. This nukadoko refill contains only rice bran and should be used in combination with the product: Organic Nukadoko - Rice Bran for Tsukemono 1kg (ISHIKAWA02)

Conservation

Store at room temperature, away from sunlight, heat, and moisture. Remove the oxygen absorber before use. After opening, keep refrigerated.

Usage Use : The nukadoko refill is used to maintain your nukadoko mix if it has a higher water content, if the volume of the nukadoko has decreased, or if it no longer has enough flavor. Add a little salt to the refill (count 1 part salt to 10 parts rice bran) then add it all to your nukadoko and mix well before leveling the surface. Let stand at room temperature for three days, without stirring. On the fourth day, stir the mixture well to allow air to penetrate. The surface can be covered with white yeast, which should also be stirred. Once the mixture no longer has a strong odor, the nukadoko is ready to be used.

Kanazawa Daichi is an organic farm, located in the suburbs of Kanazawa and Oku-Noto, in Ishikawa Prefecture. It practices environmentally friendly agriculture. It mainly grows rice, barley, wheat, buckwheat, vegetables, and fruits organically, using abandoned farmland. The processed products it sells are all made with food grown locally on the farm, which promotes both the close relationships with producers and their work.
