This unique vinegar is made from legumes, red azuki beans grown in Tokachi on the island of Hokkaido. The producer has patented a process for fermenting vegetables and legumes, allowing him to develop vinegars using only legumes and water.

Tokachi Hills is a company based in the sub-prefecture of Tokachi, on the island of Hokkaido. Founded in 1954, the company mainly produces and distributes Japanese yam and several legumes: soybeans, red and white azuki beans. It is at the origin of a patented process for transforming vegetables and legumes into alcohol, then into 100% natural vinegars including the unique red bean vinegar! In 2008, the company opened a thematic garden, an open estate extending over 23 hectares with gardens, vegetable patches, café and shop: an enchanting place which invites visitors to appreciate the richness of local agriculture.
