Steamed stuffed yuzu

Yuzu farci cuit à la vapeur

Ingredients (for 2 people)

  • 2 fresh Yuzu
  • 2-4 Shrimp (peeled)
  • 4 Scallops
  • 10g of mushrooms (varieties of your choice: shimeji, shiitake, etc.)
  • 2 teaspoons of cooking sake
  • 2 teaspoons of salmon roe
  • Chives

Yuzu sauce jelly:

  • 1 tbsp of yuzu juice
  • 1 tablespoon of soy sauce
  • 1/2 tablespoon of honey
  • 1 tablespoon of water
  • 0.5g of agar-agar

Preparation


1.Cut off the top of the yuzu, then scoop out the inside. Squeeze the pulp to extract the juice and set aside.

2.In a small saucepan, combine the sauce ingredients. Stir in the agar-agar, then bring to a boil to dissolve it completely. Let cool to form a jelly.

3.Fill the inside of the yuzu with the peeled shrimp, the chopped scallops, and the mushrooms.

4.Drizzle with a little sake, then place the yuzu in a preheated steamer. Cook for 5 minutes.

5.Finish by decorating with salmon roe, chives and a little jelly.
