Description

While we're used to enjoying sake with meals or as an aperitif, sake is also a key ingredient in Japanese cuisine, used in many dishes. This junmai sake is made with Hitomebore rice from Iwate Prefecture, not sake-rich rice. It can be enjoyed straight from the pot, but it's also perfect for cooking. The umami naturally present in sake will be absorbed by the ingredients, making them flavorful and tender.

Flavor

Appearance: Sake is transparent, translucent and shiny

Nose: The nose is directly focused on nuts: almonds and walnuts. We find fruits like peach in syrup and melon. Upon aeration, the rice takes over accompanied by apple, grapefruit and cream. It is balanced.

Palate: The attack is sweet with freshness. We find rice, almond and cooked apple.

Finish: The mid-palate arrives directly on a finish with pleasant notes of rose petal and plum.

Store in a cool, dry place away from light.

Founded in 1662, the Tatsuuma Honke brewery draws its excellence from Nishinomiya, in the heart of the Nada region, the historic cradle of Japanese sake. Nestled between Osaka and Kobe, this city benefits from ideal conditions for brewing: a water of great purity (the famous “miyamizu”), an exceptional rice, and direct access to sea routes. Among his creations, Hakushika sake has been famous since 1877 by winning a prestigious award and then a gold medal at the Paris World's Fair. This sake quickly became the house's emblem. The name Hakushika, which means "white deer," is inspired by a Chinese legend in which a Tang Dynasty emperor is said to have encountered a white deer wearing a medal indicating that he was over a thousand years old. He saw this apparition as a symbol of longevity — and himself became one of the dynasty's longest-reigning rulers. By adopting this name, Tatsuuma Honke pays homage to his centuries-old heritage, while affirming his commitment to promoting the art of sake for generations to come.
