This umeshu comes from the Noto region, located in Ishikawa Prefecture and known for its rich terroir and quality agricultural products, such as the ume plums used for this umeshu. It is made from plums grown with care and love by partner farmers in the Noto region. Each fruit is selected and hulled by hand with great attention to detail. The secret to its intense flavor lies in the abundant amount of pickled plums in Junmai sake—"twice as many plums as in regular umeshu." The product has also been praised by chefs at tastings held at three-star restaurants abroad and has been featured in the Wall Street Journal. Alcohol content: 12.1°
