Description
This is an excellent "Junmai" sake, meaning that the alcohol in the bottle is produced exclusively by fermentation. It is a Daiginjo with a 40% polishing of the initial rice grain. This is therefore the heart of the rice, the area richest in starch. The type of rice used is Yamada-nishiki rice, considered the king of sake rice. Alcohol content: 17°
Flavor

Appearance: The sake is translucent, with a very subtle straw tint. It is shiny.

Nose: The nose is of dried fruits, such as almonds and marzipan. Little by little, other fresh fruits appear, such as apple and pear. Upon aeration, the nose remains discreet with a hint of mint.

Palate: The palate is fresh as mint. The attack is very pleasant with a beautiful salivating acidity. In the mid-palate, notes of golden honey and cactus appear with very powerful umami. There is also a saline side that develops during the tasting. The aromatics are discreet on the almond and the textures are very present. There is length with a hint of bitterness. This is a sake in power and control.
