Iyokan (Citrus × iyo) is a Japanese hybrid citrus fruit, a cross between mandarin and pomelo, and the second most produced citrus fruit in Japan. Native to Ehime Prefecture, its name comes from the old name “Iyo” for this territory. Similar in appearance to mandarin (thick skin, bright orange color, juicy flesh), it is distinguished by its sweet flavor with a hint of acidity and a slight bitterness that prolongs the freshness in the mouth. These iyokan peels have been carefully candied in a sweet syrup heated at a low temperature, then dried and sweetened : a meticulous preparation lasting approximately two and a half days, which produces a dry, non-sticky texture, preserves freshness, and reveals the aroma of the fruit. The sugar softens the natural bitterness of the zest while revealing its subtle aroma, somewhere between mandarin, orange, and grapefruit.
Flavor

Peels with subtle notes between mandarin and orange, slightly tangy and sweet. Hint of bitterness. Soft but dry, non-sticky peel.

Conservation

Store away from light, heat, and humidity. Once opened, consume quickly.
