Description

Iburigakko is a Japanese radish, smoked and then pickled, traditionally grown and prepared in the Akita region of northern Japan. In late October, the radishes are hand-picked and smoked for three days with oak wood, then marinated for over 50 days with sugar, salt, and rice bran. The addition of beer in the marinade helps accentuate the umami flavor of the daikon radish, which is what gives it such a unique taste!

Flavor

Iburigakko has a round, smoky, and slightly sweet flavor with a nice umami. It has a nice crunchy and juicy texture.

Conservation

Store away from sunlight, heat, and humidity. Refrigerate after opening and consume within one week.
