Description

This black vinegar is carefully crafted from organic brown rice and koji grown in Aya-cho, then prepared with pure water from "Aya no Meisui" , one of the 100 best waters in Japan . Fermentation and maturation take place slowly, for over a year, in huge Japanese jars placed outdoors. These jars ensure gentle and stable fermentation, with minimal temperature fluctuations, resulting in a rich, deep and balanced vinegar.

Flavor

This vinegar is naturally aromatic, with well-developed organic amino acids, and not harsh on the palate. Its flavor is sweet and rounded, with a light toasted aroma of brown rice.

The producer

Oyama

Oyama is located in the heart of nature in Miyazaki Prefecture. Founded in 1930, it relocated to the city of Aya in 1973 to be closer to the purest water source needed to make its vinegars. Aya's renowned water has been purified by the dense forest that surrounds it. Oyama's products are organic, pesticide-free products made from pure water, brown rice and koji according to a simple traditional process where the southern sun and the action of time are key elements.
