Ehime prefecture is located on the island of Shikoku, bordered by the Seto inland sea and many mountains such as the mont Ishizuchi, higher summit of west Japan. With its warm climate and its preserved nature, the prefecture of Ehime is known for producing "healing sakes", gentle and warm, that go perfectly with the local cuisine developed toward Seto white fish. Along with great freshwater from the surrounding mountains, Ehime has created its own sake rice in order to brew good sake in a warmer climate. The origin of sake in the region can be track back to 400 years ago thanks to some written notes from 1611.
