Description
This sparkling sake is designed with Japanese champagne in mind. It has a low alcohol content of 7°C, about half that of sake, making it a light and refreshing drink. It is made from Niki Tatsu sake, which has been produced by the brewery for over 120 years. Alcohol content:
Flavor

Appearance: The foam is rapid, the bubbles are thick then fine. The sake is bright, clear and colorless with a slight silver sheen.

Nose: The initial nose is subtle. There are notes of grated coconut and lychee upon aeration. There are also subtle hints of almond and nashi pear.

Palate: The attack is slightly sparkling and sweet. There is a delicate aromatic, still on coconut milk and grated coconut with a hint of pineapple. There are some touches of rice and stone fruits like peach. This is a simple, refreshing sake.

Finish: The finish is floral with jasmine.

Store in a cool, dark place.

Minakuchi Shuzo Brewery was founded in 1895 in Matsuyama, in Ehime Prefecture and remains the only brewery in Matsuyama. For over a century, it has maintained close ties with the Dogo hot springs, and has always favored the use of ingredients from local agriculture for brewing its sakes, beers and other alcoholic beverages.
