Founded in 2013, Makurazaki France Katsuobushi set out on a mission to introduce Europe to the authentic flavor of dashi, despite the challenges of sourcing quality bonito due to European regulations. The Japanese city of Makurazaki, the true capital of katsuobushi, boasts over three centuries of history and expertise in bonito fishing and processing. Ten local seafood processing companies joined forces to bring this project to life, based in Concarneau, Brittany, whose port shares many similarities with that of Makurazaki. In response to regulatory constraints, Makurazaki France Katsuobushi successfully adapted its production methods to stay true to traditional Japanese techniques while complying with European standards. Its ambition: to make authentic katsuobushi accessible and encourage its use in local kitchens around the world.
