1. Cut off the crust of sandwich bread slices and flatten with a rolling pin.
2. Place one slice in front of you with one corner facing you. Add approximately 2 teaspoons of curry on the lower part of the bread slice, without going further the diagonal of the bread slice and being close to the edges. If the curry has big chunks of meat or vegetables, it could tear the bread. Therefore, cut them smaller.
3. Fold the upper portion of the bread slice over the bottom part and seal the edges together with damp fingers. Make sure to seal them tightly to prevent oil from getting into the bread.
4. Repeat for the remaining slices. Withwash the sandwiches with the beaten egg and dip in panko bread crumbs.
5. Heat up a bit of frying oil and fry the small pans. Once both sides of the sandwiches are well browned, place them on a plate lined with absorbent paper.
