Umeboshi, also known as salted plum, is a variety of Japanese plum related to the apricot. Its salty flavor is very popular and appreciated in Japan. It has remarkable medicinal qualities: it counteracts fatigue, stimulates digestion, and eliminates toxins.

Maruyama Foods

The company Maruyama Foods, located in Wakayama Prefecture, cultivates Japanese plums called Ume since 1955. The company is located in the village of Minabe, which is renowned in Japan for the quality of its Ume, and is the largest Ume production site in Japan in terms of quantity. Maruyama Foods supplies us with its traditional Umeboshi (salted plums), as well as umeboshi paste. The plums used for these creations are of the Nankobai (南高梅) variety, a category considered high-end and one of the best available.
