Description
This traditional umeshu is made with barley shochu and plums from the Saga region. The plums are simmered in the shochu using an ancient method, with the only additive being crystal sugar to counteract the acidity of the fruit. Shochu is a distilled spirit usually made from rice, sweet potato, or barley, as is the case in this umeshu. The barley shochu, produced by the producer himself, brings a powerful, rounded aroma that pairs perfectly with the sweet and sour flavor of the fruit. Alcohol content: 15°
Flavor

Appearance: This umeshu has a lovely apricot color.

Nose: The first nose is powerful with almond paste. The second nose presents notes of cereals, almonds, cherries, hay, and orange. We can smell a little alcohol from the shochu.

Palate: The palate is sweet but balanced. There is a slight bitterness that makes the tasting fresh with a nice acidity. There are dried fruits and umeboshi plum. A vegetal side emerges with lingering notes of tea.

Finish: The finish is light with apricot and bitter almond. After a few moments, the apricot kernel lingers.

Conservation

Store in a cool, dry place away from light. Refrigerate after opening.

Usage Pairing: Ideal as an aperitif, it pairs very well with acidity, bitterness, spices, egg, umami and dried/smoked ingredients. Enjoy it in a cocktail, with a cheese and dried fruit platter (almond, dried apricot, hazelnut, walnut, pine nut, etc.), with a cherry tart, peach melba, cheesecake or chocolate fudge cake. Serving temperature: This lovely umeshu can be enjoyed chilled (10-12°) but also at room temperature (17-20°) or even a little warm (47-50°).
