Description
Mozuku is an edible brown seaweed harvested primarily around Okinawa, accounting for 90% of the production. It grows in long filaments directly on rock or by clinging to other seaweed. Okinawan mozuku is distinguished from other mozuku by its unique, thicker, and crunchier texture. Rare outside of Japan, mozuku is not only appreciated for its subtle, salty flavor, but also for its concentrated benefits: antioxidant and anti-inflammatory properties, rich in fiber and vitamin K, but especially fucoidan, a miracle molecule used in cancer treatment.
Flavor
Subtle and delicately iodized flavor, evoking the freshness of the sea with a slight natural acidity. Its texture is unique, with its soft, slightly crunchy and almost gelatinous filaments, which provide a pleasant and original sensation.
Conservation
Store at room temperature, away from sunlight and heat (can be refrigerated or frozen). After opening, keep refrigerated. Consume within 3 days if the salt has been removed.

Nihon Biotech
Nihon Biotech was founded in 1985 thanks to its founders' affection for Okinawa, its landscape and the richness of its environment. Specializing in the cultivation of umi budo seaweed and the marketing of products made from it, the company places great importance on research. Part of the premises is now dedicated to the study of cultivated umi budo, which has allowed Nihon Biontech to invent a variety of products around this algae in an ideal environment. Nihon Biontech fully participates in the life of Itoman, the locality in which it is located, thanks to various activities. It is possible to discover the region and umi budo through workshops, to camp on the company site or to stay in the lodge set up within its premises.
