Description
This is a junmai ginjo sake resulting from the collaboration and exchange of know-how between rice farmers and sake producers. Indeed, it is a local sake, produced with rice grown on the mountain next to the brewery. Alcohol content: 16°
Flavor

Appearance: This junmai ginjo is silvery, clear and limpid.

Nose: The first nose is aromatic with bitter almond and orange zest. There is also anise, apple and lots of melon. The second nose is velvety with an apparent sweetness as well as white pepper.

Palate: The attack is slightly sparkling, which continues into the mid-palate. There is a slight acidity. The sake has aromas of cereals and rice pudding, but also fruity notes: sugared strawberries, melon, and ripe pineapple.

Finish: A hint of alcohol warmth is felt at the beginning of the finish. The finish is long and creamy with flavors of rice pudding and jasmine. Umami enhances the whole at the very end.

Usage Pairing: This sake is rather aromatic and sweet, it goes very well with acidic, bitter, umami flavors but also spices, iodine, egg and smoked/dried ingredients. Elegant and versatile, Sumiyama sake can accompany smoked salmon with lemon dill cream, a salmon and spinach quiche, a Greek moussaka or a tomato mozzarella and fresh basil salad. Serving temperature: It should preferably be consumed chilled (10-12°)
