Description
Junmai Ginjo sake with a very balanced 55% polishing rate. It is produced with a blend of two rice varieties: Yamadanishiki, the quintessential sake rice, and rice from the Saga region. It is perfect for discovering Japanese sake. Alcohol content: 15°
Flavor

Appearance: This sake is transparent with a slight straw color and beautiful tears.

Nose: The first nose is very iodized with kelp, squid ink, and sea salt. The second nose confirms the trend with a little more grassy and fruity aromas: angelica, fennel, melon, and green fig. It is a complex nose: several aromatic families blend together. We also smell a touch of camphor, honey, and earth. It is atypical.

Palate: The palate is sweet: the texture is a bit reminiscent of honey. It's dense. There are still notes of iodine, sea salt with umami. There is a nice freshness that softens the powerful body of this sake with a -15 nihonshudo.

Finish: The finish is more on roots and cooked rice. It is long.

Usage Pairing: An atypical sake in terms of aromas and sweetness that will need to be balanced when pairing. It goes very well with acidity, bitterness, spices, iodine, egg, umami, dried/smoked ingredients. Enjoy it with fresh goat cheese, honey and good country bread or sea urchin and lemon, sea bream carpaccio or parmesan lasagna. It will also be delicious as a dessert wine. Serving temperature: Very chilled (5°-10°) or cold (10-12°).
