Description

This organic miso is made from organic soybeans and rice from Ishikawa Prefecture. It has the unique feature of containing a high amount of koji, which gives it an even deeper flavor. After fermenting for over 9 months, the miso achieves a dark gold color and a texture that still contains rice grains.

This miso has been fermented for 9 months. It is not pasteurized.

Flavor

It has a very umami flavor, an intense and slightly sweet taste.

Store in a cool, dry place away from light. Refrigerate after opening.

Usage It is delicious in meat marinades such as pork, but also for making sauces for vegetables such as eggplant and peppers. It is also used, of course, for the famous miso soup, although with a different texture, with small grains of rice in this miso.

Kaga Miso

Kaga miso is the number one miso producer in Ishikawa Prefecture. Its strength comes from the union of 10 historic miso producers, already present since the Edo (1603-1868) and Meiji (1868-1912) eras, with the goal of producing more miso under impeccably hygienic conditions. Their miso is characterized by a rich and robust flavor, achieved thanks to a high proportion of rice koji and long aging, as well as a traditional manufacturing process in which a yeast made in-house is added to the miso. While preserving a traditional production method that takes advantage of the region’s water, Kaga miso offers miso that adapts to consumers’ tastes.
