Description

Yuko is a yellow Japanese citrus fruit, larger than a clementine. It is currently rarely cultivated, but is found in the mountains of Tokushima Prefecture in the cities of Kamikatsu and Kamiyama.

Flavor

A rounder aroma than sudachi, a sweet, slightly bitter flavor, between orange and grapefruit.

Usage Yuzu was once used instead of vinegar to add acidity. It can be used as a lemon substitute in your seasonings and sauces to accompany fish and seafood, but also in sorbets, fruit salads, or cocktails. Combined with yuzu juice, it will add roundness and subtly change the flavor of your pastries, which usually contain lemon.

JA Tokushima

JA Tokushima is a cooperative bringing together more than 400 small farmers in the city of Kamikatsu, in the heart of the Tokushima region. Boasting an exceptional natural environment, this region is renowned for its exceptional citrus fruits, such as sudachi, yuko or yuzu, which grow naturally there. JA Tokushima presses these fruits for produce pure juices, without any additives, restoring all the freshness and liveliness of freshly picked fruit. Each year, Kamikatsu farmers harvest around 250 tons of yuzu, 230 tons of sudachi, and 115 tons of yuko. This village, famous for its rice terraces and unspoiled landscapes, is also an ecological pioneer: in 2016, it was already sorting 81% of its waste. Kamikatsu is also known for its plant-based table decorations business, in a spirit of promoting and respecting nature that is fully reflected in JA Tokushima's commitment.
