This yuzu amazake is a refreshing and invigorating drink that combines the fresh acidity of yuzu with the natural sweetness of koji. Amazake is a naturally sweet, non-alcoholic beverage made by fermenting rice with koji. The yuzu juice used is pressed from fruits grown in the hot spring town of Takamatsu, Kagawa Prefecture. Yuzu amazake is gluten- and lactose-free.

Usage With its lovely acidity, yuzu amazake can be enjoyed on its own, fresh or heated, but it is also delicious in sauces, for example combined with a little olive oil and vinegar to make a vinaigrette or a creamy sauce for your raw vegetables by combining it with mascarpone and a little honey.
