Description
This salt is harvested in Goshikicho on Awaji Island, considered in Japanese mythology as the original land. It takes its name "drop of Onokoro" from the famous Japanese legend recounting the creation of Japan's first island, Onokoro Island, by the gods Izanagi-no-Mikoto and Izanami-no-Mikoto. After being harvested, the salt crystallizes naturally by sun drying. It is then slowly roasted with wood chips to bring out its iodized taste before being left to rest in cedar barrels. Usually, salt represents 1% of the volume of seawater used and this rare salt represents 1/10 of the volume of salt extracted from seawater. Without any additives or preservatives, it preserves the minerals and trace elements present in seawater.
Flavor
Awaji Island's rare salt possesses a unique umami flavor achieved through traditional production methods and slow, natural crystallization. It has a beautiful crystallized appearance and a mild, subtle salty flavor. The large pieces of this salt melt like snowflakes in your mouth.
