Historically, Japan had many varieties of rice, reflecting a rich agricultural tradition. With mechanization, some have been eclipsed by modern varieties that are more practical to grow. However, ancient rice, although more difficult to cultivate, is still prized for its beauty and unique flavor. This ancient rice combines three rice varieties: red rice, rich in tannins and nutrients; black brown rice, rich in vitamins and proteins thanks to its husk, which still covers the grain; and sticky rice, Takayama Mochi, grown without chemical fertilizers.

Flavor

This ancient rice has a light, nutty flavor and a more fragrant aroma than white rice.
