Yuzu is a very hardy yellow citrus fruit from the Rutaceae family, primarily grown in Asia. After Kochi, Tokushima is Japan's second-largest yuzu producer. Yuzu is a citrus fruit prized by top chefs for its incredible balance of acidity and sweetness. This yuzu juice is produced by pressing the fruit of a cooperative of 400 small farmers.

Usage Its intense aroma and lovely acidity make it the perfect ingredient to add depth to your seasonings such as vinaigrettes, marinades, sushi vinegar, etc. Make homemade ponzu by mixing it with a little soy sauce and vinegar. Yuzu juice can replace lemon juice in both savory and sweet dishes: yuzu cake, mousse, whipped cream, etc.

JA Tokushima

JA Tokushima is a cooperative bringing together more than 400 small farmers in the city of Kamikatsu, in the heart of the Tokushima region. Boasting an exceptional natural environment, this region is renowned for its exceptional citrus fruits, such as sudachi, yuko or yuzu, which grow naturally there. JA Tokushima presses these fruits for produce pure juices, without any additives, restoring all the freshness and liveliness of freshly picked fruit. Each year, Kamikatsu farmers harvest around 250 tons of yuzu, 230 tons of sudachi, and 115 tons of yuko. This village, famous for its rice terraces and unspoiled landscapes, is also an ecological pioneer: in 2016, it was already sorting 81% of its waste. Kamikatsu is also known for its plant-based table decorations business, in a spirit of promoting and respecting nature that is fully reflected in JA Tokushima's commitment.
