This "Murasaki" sauce is an exceptional koikuchi soy sauce, the result of slow fermentation and extended aging, which develops a unique umami depth. Made from high-quality whole soybeans, wheat, and rice, it offers a perfect balance between sweetness and richness.

The company Choko Shoyu, founded in 1941 in Nagasaki Prefecture, originally brought together 29 small soy sauce brewers and miso makers, who decided to join forces to sell their products. The company is FSSC certified , (Food Safety System Certification) and ISO, and aims to satisfy its customers with healthy and safe products. It mainly produces Japanese seasonings , such as soy sauce, miso, sauces, vinegar, dressings, and soups. The company employs about 130 people and uses mostly high-quality organic ingredients to avoid food additives and ensure authentic flavor. The company is proud to combine advanced technology and respect for tradition to offer top-quality products.
