Yuzu mayonnaise

Mayonnaise au yuzu

Ingredients


  • 1 egg yolk
  • 1 teaspoon of mustard
  • 10cl of sunflower oil
  • 2 teaspoons of yuzu juice
  • 1 teaspoon of brown cane sugar
  • salt and pepper

Preparation


1.Whisk the egg yolk with the mustard in a salad bowl.


2.While continuing to whisk, gradually add about half of the sunflower oil in a thin stream.


3.Season with sugar, yuzu juice, and salt and pepper to taste. Mix well.


4.Whisk again and add the remaining oil in a thin stream, until you obtain the ideal texture: creamy and firm.
