Shimabara Tenobe Somen is a Somen noodle makers' cooperative located in Shimabara in Nagasaki Prefecture. Somen are very thin Japanese noodles made from wheat flour with the particularity of being quick to cook. They are generally eaten cold in soup in the summer. The city of Shimabara is a region whose traditional production of Somen has been renowned throughout Japan since the 17th century. The Shimabara Tenobe Somen cooperative is a brand association formed in 1978 by several producers in the region with the aim of protect and promote their traditional know-how which is based on hand production.
