Produced locally in the only authentic barley brewery in Hokuriku, this high-quality barley shochu has been aged for three years. Alcohol content: 27°

Pairing : Ideal as an aperitif, it pairs very well with acidity, bitterness, spices, egg, umami and dried/smoked ingredients. Enjoy it in a cocktail, with a cheese and dried fruit platter (almond, dried apricot, hazelnut, walnut, pine nut, etc.), with a cherry tart, peach melba, cheesecake or chocolate fudge cake. Serving temperature: This umeshu can be enjoyed chilled (10-12°) but also at room temperature (17-20°) or even a little warm (47-50°).

Umeboshi has a very fruity and delicate flavor with a marked salty taste.

Umeboshi are usually eaten with rice, in onigiris, in sauces for raw vegetables, fish, but can also be infused in soy sauce or even in green tea.
Store at room temperature and away from sunlight. After opening, keep refrigerated.

Appearance: This umeshu has a lovely apricot color. Nose: The first nose is powerful with almond paste. The second nose presents notes of cereals, almonds, cherries, hay, and orange. We can smell a little alcohol from the shochu. Palate: The palate is sweet but balanced. There is a slight bitterness that makes the tasting fresh with a nice acidity. There are dried fruits and umeboshi plum. A vegetal side emerges with lingering notes of tea. Finish: The finish is light with apricot and bitter almond. After a few moments, the apricot kernel lingers.
Shochu (water (48.7%), barley (16.4%), barley koji (8.1%)), ume (Japanese plum) (14.6%), sugar (12.2%).
