Description

This sake comes from Hiroshima Prefecture. It is a “junmai” sake, which means that the rice has been polished and only 70% of the original rice grain remains. This is one of the highest quality sake categories. It can be enjoyed at any temperature: cool, room temperature, or lukewarm. It received the gold medal at the IWC 2014. This sake is made using the traditional Yodan-jikomi , or “four-step brewing,” method, which introduces an additional step to the classic brewing process. During this final step, a naturally sweet mixture of water and koji is incorporated, softening the acidity while enriching the flavors. The result is a rich and balanced sake with a silky, mellow texture.

Flavor

Appearance: The sake has a beautiful, very light straw color. It is translucent and shiny.

Nose: The nose is expressive with roasted notes like fresh coffee, but it is also fruity with touches of peach, apricot, and almond. The second nose is also aromatic with water fruits like melon and watermelon. There are also anise and peppermint that bring an appreciable spicy side.

Palate: On the attack, there is a nice acidity and sweetness. This is a charming sake with little aromatics but a lot of flavor. The umami is powerful in the mid-palate. There are notes of apple, peach, and stone fruit in general, but also spices that echo the nose. The spice continues through to the finish, with a pleasant hint of sweetness.

Finish: The tasting ends with beautiful floral notes of apricot blossom and a hint of citrus zest.

Usage Pairing: This sake can be consumed at different temperatures: cold, chilled, or at room temperature. It has a great versatility. A platter of mature cheeses (aged Comté, Parmesan, goat's cheese, etc.) will be the ideal accompaniment. Likewise, it will be delicious with a warm goat's cheese salad with a hint of lavender honey on crusty bread, but also with grilled sole with a little Espelette pepper, or a citrus and red fruit salad.
