Description

This soy sauce is a saishikomi soy sauce, a premium soy sauce that has been fermented twice using existing soy sauce, giving it a deeper, more complex flavor. It was fermented naturally, without additives, and matured for three years in Japanese cypress wood barrels. It is made from Japanese soybeans and wheat, as well as sun-dried salt.
This soy sauce has been fermented for 3 years.

Flavor

Its taste is typical of saishikomi: deep, long, round in the mouth, slightly sweet and very rich in umami.

Conservation

Store in a cool, dry place away from light. Keep refrigerated after opening.

Morita Shoyu Company is located in Shimane Prefecture in the south of Japan, more specifically at Okuizumo. Located near the famous Shinto shrine, Okuizumo is a place where gastronomic products abound, as the Shimane region—known for its long, harsh winters—is favorable for the production of high-quality fermented products such as soy sauce, miso, or sake.
