Description
Shiokoji is a Japanese preparation made from koji, rice, and salt. This unpasteurized product is the first shiokoji in liquid form; it is easier to use and has a longer shelf life. Thanks to the enzymes it contains, shiokoji brings out the umami in foods and acts as a true natural flavor enhancer. It tenderizes flesh by breaking down connective tissue, retains water, and increases the viscosity of juices, making it ideal for marinades.

Store at room temperature, refrigerate after opening.

Usage Marinate meat and fish such as sea bream, trout, pigeon, beef, or pork with this shiokoji to add an umami flavor. Use 10% of the volume of your food in shiokoji. It can be mixed with soy sauce or vinegar, for example. You can also use it in the preparation of your sauces and jellies.
