While there are several different types of udon in Japan, sanuki udon, a type of soft wheat pasta, is the most popular. Born in the Kagawa region (formerly Sanuki) over 300 years ago, sanuki udon is particularly popular with the Japanese because it is thicker and firmer than other types.

Usage Instructions: Cook the udon noodles in a large pot of boiling water for 13 minutes. Use: Wider than other varieties of Japanese noodles, udon are generally enjoyed in broth, accompanied by different ingredients (braised pork, soft-boiled eggs, mushrooms, seaweed, etc.), or cold with mentsuyu sauce.
