Description
This is a simple sake with a clean taste, produced by a company established in the Saga region since 1688. It is a karakuchi sake, dry, which is rare in this region. It is perfect for discovering Japanese sake. Alcohol content: 15°
Flavor

Appearance: This sake is clear, it has no coloring.

Nose: The first nose is powerful with cereals and cocoa. There are also notes of mushroom. The second nose has scents of pear but very quickly, we return to cereals (cooked rice, puffed rice). There is a tangy and warm side. We feel a certain fullness with the alcohol but it is not negative.

Palate: The palate has a fresh attack. There is a slight sweetness but it is still dry. There is a velvety texture with great liveliness: like water. We find aromas of fruit and especially rice, green hazelnut, ripe apple and mushroom. There are also spices.

Finish: The finish is on aromas of rice and very ripe apple. It is very clear.

Conservation

Store in a cool, dry place away from light.

Usage Pairing: It pairs very well with flavors such as acidity and bitterness or umami, but also spices, iodine, egg, dried/smoked products. Serve it with quiche Lorraine and its vinaigrette green salad, barbecued trout, grilled red mullet with lime, or mendiants with dried fruits and ginger. It goes very well with fried food, Korean barbecue, or ginger chicken. Serving temperature: This sake has a dry and spicy profile. It can be emulated chilled (10-12°), at room temperature (17-20°) but especially heated (47-50°).
