Description

Large kombu leaves are thinly sliced ​​and cooked in soy sauce, without additives, before being dried. The kombu variety used is wild Ma Kombu. Considered the king of kombu, Ma Kombu is caught in the southeastern region of Hokkaido. Once used as an offering, it has the particularity of having a thick flesh with a soft texture that makes it suitable for making rich broths.
