Description

These ume plum flakes are made from sour plums from the Kumano region. They are macerated with salt in plum wood barrels for 3 years. This long maturation brings out the fragrance and umami of the plums, which are then frozen and dried before being reduced to flakes.

Flavor

A lovely acidity underlined by the fruitiness and saltiness of the plums.

Conservation

Store in a cool, dry place away from light.

Usage In addition to being able to be used as a furikake sprinkled over rice or in onigiri, ume flakes go particularly well with meat. You can mix them into ponzu or a taré sauce for gyoza, put a little on your fried chicken, boiled pork, etc. They will allow you to create magnificent spice blends. Of course, the flakes are also delicious with cheese like goat cheese or feta!
