Description
Sake with the koshu appellation is a sake matured for at least 3 years. Our koshu has been aged for 10 years. With its beautiful amber color, sweet flavor, and slightly syrupy texture, it is reminiscent of the famous Shaoxing rice wine or the yellow wine of Jura. It was made from honjozo sake brewed in 2010 from Yamada Nishiki rice produced in Hyogo. This sake won the gold medal at the 2020 Kan Zake competition just before its release. Before filtration, a little alcohol is added to the sake to develop its aromas, as in port or sherry. This is not intended to increase the alcohol percentage, but to release the aromas of the sake before letting it mature. Alcohol content: 17.5°
Flavor

Appearance: This Koshu has a beautiful pale gold color. It is translucent and shiny.

Nose: The first nose is aromatic with light soy sauce, puffed rice, and iodine. Spices, hazelnuts, and roasted peanuts are detected. After aeration, the aromas are confirmed: roasted notes, cocoa, dried fruits, banana, and quince.

Palate: The attack is sweet and toasted rice. It's powerful, almost animal. The alcohol is present and diminishes as the tasting progresses. The mid-palate is round with notes of dates, dried figs, but also hazelnuts and toasted almonds. The overall effect is balanced and peppery.

Finish: The finish is cinnamon-flavored with apricots in alcohol. A touch of dark honey and light soy sauce rounds off this complex tasting.

Usage Pairing: Enjoy it on its own, or as a substitute for rum in cocktails, in place of vin jaune when cooking capon, or over vanilla ice cream like caramel. This sake pairs particularly well with foie gras and citrus chutney, oysters, a chocolate tart with bitter orange marmalade, or a blue cheese platter. Serving temperature: Chilled (10°-12°) or at room temperature (15°-25°). Lightly heated for 1-2 minutes in a bain-marie to 40-45°, it will develop its aromatic palette and gain depth.

Founded in 1662, the Tatsuuma Honke brewery draws its excellence from Nishinomiya, in the heart of the Nada region, the historic cradle of Japanese sake. Nestled between Osaka and Kobe, this city benefits from ideal conditions for brewing: a water of great purity (the famous “miyamizu”), an exceptional rice, and direct access to sea routes.
