Anko is a traditional Japanese sweet paste made from red azuki beans. It's found in a variety of traditional desserts, from mochi to dorayaki. There are several types, including tsubuan, which intentionally retains the bean pieces for a more rustic and authentic texture.

Usage Tsubuan dough is ideal for filling traditional Japanese pastries such as dorayaki, mochi, or taiyaki.
