Description

White soy sauce is a specialty of the Aichi region, renowned for both its wheat fields and the purity of its water. Unlike traditional soy sauces, it is made from 90% wheat and only 10% soybeans . This unique composition gives it a light, almost transparent color and a delicate, round, and sweet taste. Its aromatic richness comes from the breakdown of wheat proteins, enhanced by a natural salt dried in the Mexican sun. The result: a balanced sauce, rich in umami, with a subtle and elegant flavor.
